Avocado Salad with Bacon (Recipe)

Avocado is definitely one of my favorite foods. It only makes sense that I would figure out a way to make an avocado salad.

Not only does avocado taste fabulous on a burger, in an omlette, or as homemade guacamole, it’s also a powerhouse health food. This tasty creamy green fruit is rich in healthy fats, vitamin B6, potassium, and folate. Polyphenols and flavonoids are present in avocados as well, which are compounds that help decrease inflammation (the real enemy of your arterial walls, not cholesterol as some would have you believe).

This recipe for avocado salad makes use of another one of my favorite foods—bacon! I hope you enjoy.

Avocado Salad with Bacon

Avocado Salad

  • 1 medium avocado diced into small pieces
  • 1 roma tomato
  • 1 T. finely chopped onion
  • 3 slices bacon (fried crisp and crumbled)
  • 1 T. finely chopped cilanto
  • 1 T. fresh lime juice
  • 1 T. olive oil
  • 1/2 clove garlic
  • 1/2 t. salt
  • 1/4 t. cumin
  • 1/4 t. chili powder

Mix all ingredients together and enjoy immediately!

    What I want to know is: What are the ingredient portions for 4 people? Obviously, this is just a single portion!

      Good question! I didn’t even think to add that. I should edit the post. The picture is the full recipe. I could sit down and eat the whole thing myself. If it was just part of a full meal and you were using it as a side I would probably say it would be a portion for 2 people.
