It never seems to fail that when Saturday morning rolls around (or rather, when I roll out of bed on Saturday morning) my children are all asking for something special for breakfast – like donuts. You know, the whole weekend treat thing. And so I regularly face the job of giving my kids a little treat while I fill their bellies with a wholesome breakfast.
Before going gluten and refined sugar-free this would have been quite the quandary. But one thing about learning to bake through food intolerances is that it opens your horizons to beautiful foods you never would have made before. And you can make healthier versions of foods you might have been tempted to try pre-gluten-free.
Donuts are fall in that category for me.
I made donuts every now and again pre-gf/sf, but they definitely weren’t healthy (even though they were more so than Krispy Kreme). But now when I think about making my kiddos their requested Saturday morning treat, my brain starts compiling all the wonderful and delicious recipes I could make them. Sorta like Remy the rat tasting the flavor combos in Ratatouille… Like this cheese and strawberry combo he’s sampling here. Which brings me back to the donuts.
Local strawberries have been producing up a storm down here in the south and I’m totally making strawberry everything. And what goes wonderfully with strawberries? Cream cheese. At least in my opinion. So I thought Strawberry Banana Donuts paired with Honey Cream Cheese Frosting would be a delicious way to celebrate summer and the weekend!
After taste-testing one for me, my husband agreed. These were supposed to be a weekend treat for my kiddos. My husband and I ate most of them. 😉 Parents need weekend treats, too, am I right?
Strawberry Banana Donuts with Honey Cream Cheese Frosting
Ingredients
Donuts
- 1 1/2 cup bananas mashed (about 3 medium)
- 4 eggs
- 1/4 cup honey
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/2 cup coconut flour packed
- 1/2 cup strawberries diced
Frosting
- 4 oz. cream cheese softened
- 2-3 tablespoons honey
- 1/2 teaspoon vanilla
Instructions
- Preheat donut maker.
- In mixing bowl, mash bananas. Add in eggs, honey and vanilla.
- Mix well and stir in remaining ingredients. Let stand for a few minutes.
- Bake two heaping tablespoonfuls of batter for 12 minutes in donut maker.
- In separate bowl whip cream cheese, honey and vanilla. Frost cooled donuts.
- Makes about 2 dozen medium-sized donuts.

These look delicious! I don’t have a donut maker…could I bake them in the oven instead with a molded pan? Those are a bit cheaper to buy than a machine.

Oh wow, I am very interested to try these with the banana and coconut flour combo. Usually when I try to bake with just coconut flour it turns out pretty powdery and… well, just not great!
