How can you improve upon a good broccoli cheese soup?
By adding bacon, of course! (Doesn’t bacon make pretty much everything better?) This is creamy, cheesy soup is one of my oldest son’s favorites. If you’re trying to stick to a ketogenic diet, it would be a fantastic addition to your meal plan.
I’ve found that picky eaters are sometimes more likely to eat their veggies if they’re disguised in a soup or casserole. If you have anyone in your household who isn’t the biggest fan of “green stuff,” just tell them this is bacon-cheese soup… which is technically true. 🙂
It’s also loaded with broccoli, which is an excellent source of protein, fiber, vitamin C and vitamin K. Yes, protein! Broccoli has more than most other vegetables: 2.5 grams per one cup of raw broccoli (which cooks down to a much smaller amount).
This soup is full of healthy fats (especially if you use very high-quality bacon, bone broth, butter and cheese). It’s quite rich and filling, and is nutritious enough to be a meal in itself.

Tastier Broccoli Cheese Soup (with Bacon!)
Ingredients
- 1 stick butter from grass-fed cows
- 1 clove garlic
- 1 small onion chopped finely
- 16 ounces cream cheese, softened
- 6 cups bone broth
- 2-3 bunches broccoli, chopped
- 2 cups heavy cream
- 16 ounces mild cheddar I used Grass Point Farms
- 16 ounces aged cheddar I used Kerry Gold
- 1 pound bacon, cooked and crumbled
Instructions
- Melt butter in a large pan.
- Sauté the garlic and chopped onion in the butter.
- Add the cream cheese and broth to the pan. Stir until the cream cheese is fully melted.
- Add the broccoli. Cover the pan and let simmer until broccoli is tender.
- Finish the soup off by adding the heavy cream, cheeses, and bacon. Cook over medium-low heat until warmed through.

Yummm. My mom makes fantastic broccoli cheese soup, and I’ve always made mine the same way she does (with lots of basil). I never thought about putting cream cheese in it. I will definitely have to try it! I just don’t know if basil and bacon are a good combo. Maybe I’ll try it to see.

I made this tonight and tweaked it a bit. I baked the broccoli along with mushrooms and cauliflower in a pan with salt and olive oil before adding it to the soup. I also added in some chicken. Great recovery meal on the first day back from vacation!

I’m not sure if it would due to the cream that’s in it. If you try to freeze it, you might just want to try one serving and see how it turns out after re-warming so you don’t ruin the whole batch if it doesn’t work out. Let us know if you try it!

I’m not sure, I’ve never had that happen. What kind of cheese did you use? Did you use full-fat cheese (I know fat-free and low-fat cheese can sometimes do funky things). Also, be sure to add the cheese at the end and cook only until warm and melted.
