Lard? Lard? (you ask incredulously). Yes, contrary to popular opinion lard is a fantastic source of nutrients. I know, we’ve been programmed most of our lives to believe saturated fats are unhealthy and lard has been the butt of numerous jokes, but give me just a few minutes to explain.

We will be butchering our own pig soon, and one of the things I am looking forward to is rendering my own lard. Thanks for the reminder that whole foods that our grandparents ate is good for us.
