I was wondering on your sugar free recipes, what sweetner is used? I am stevia user and have trouble with conversions. Do you happen to know some conversions to your recipes from your sweetners to liquid or powder stevia?

It really depends on the cookie what sweetener is used. In most of the sugar-free recipes xylitol and/or stevia are used.

What kind of flour do you use in most of the recipes? I’m trying to avoid almond flour…

I believe 16 of the 25 recipes use almond flour. Coconut flour is also frequently used in many of the cookies. I hope that helps!

I know nothing of this book but one can usually sub any nut or seed flour if another one works for you, rather than almond. Grind it yourself if you can’t find the flour you need. You can also combine some to lower cost or get a better texture.
