As it gets colder, which it does fast here in Michigan, I am drawn to baking. I love that it helps heat up the house as well as making the house smell inviting. My kids and I spend a lot of time baking and enjoying the winter together.
Baking requires creativity when you have to work with allergies. Sadly, eggs are a no-no for me and I’ve had to come up with some recipes that are gluten- and egg-free. These cookies are both! But they don’t sacrifice flavor or texture just because there are no eggs or wheat. If your family deals with multiple food allergies these might become a new favorite cookie in your home!
Add these cookies to a holiday cookie tray, or serve them for other special events. The spices make them especially “winter-y” but you could use other flavorings or adjust the spices to your preference. This recipe makes just about a dozen, so feel free to multiply it to make more at a time.
Day 16: Almond Spice Cookies
These almond spice cookies hold together well and have a nice crunch. The house smells super wonderful with the combination of spices. My kids ask for these all the time because they know I can’t say no, as they come together so quickly.
I like to make these more on the ‘done’ side as I enjoy my butter browned. If you like a softer cookie, then cut down on the baking time a bit.
If you like a little less sugar, you can check out my other variation of this cookie that just has touch of molasses and uses xylitol for the sweetener. And you can swap the xylitol for your favorite low-carb sweetener!

Almond Spice Cookies
Ingredients
- 4 tablespoons salted butter 1/2 stick
- 1/4 cup evaporated cane juice crystals cane sugar
- ½ teaspoon vanilla extract
- 1 teaspoon heavy cream
- 1 cup almond flour
- ½ tablespoon ground ginger
- 1 teaspoon cinnamon
- dash cloves to taste
Instructions
- Cream together butter, sugar, vanilla and cream.
- Stir together dry ingredients.
- Add the dry ingredients to the creamed butter mixture until well mixed.
- Roll into balls and flatten lightly on parchment paper.
- Bake at 350 for 12-18 minutes.
- Makes about 1 dozen cookies
