This recipe for Butter Almond Drop Cookies is one of those cookie recipes that can actually be called healthy. Packed with protein, healthy fats, and whole food sweeteners, you can have your cookie and eat it too! These cookies come together quickly with just a few basic ingredients.

These easy cookies are tasty eaten plain, and downright delicious when dipped into a chocolate sauce. The chocolate sauce contains only 3 ingredients, and adds just a touch of additional sweetness to your cookies.
If you love the flavor of almonds, you could add 1/2 to 1 teaspoon of almond extract to the cookie dough. For an even fancier cookie, dip the tops (instead of the bottoms) in the chocolate sauce, and sprinkle with unsweetened shredded coconut before the chocolate sets.
Serve these at Christmas, or any time you get a hankering for something sweet!

Butter Almond Drop Cookies
Ingredients
- 1 cup butter softened
- 1 egg
- 1/2 cup maple syrup
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- Homemade Chocolate Sauce for dipping cookies
- 1/2 cup coconut oil
- 2 tablespoons raw cacao powder
- 2 tablespoons raw honey
Instructions
- Preheat oven to 375° F.
- Beat the butter and egg in a stand mixer or with a handheld mixer. Add the rest of the ingredients and mix on medium speed until fully incorporated.
- Drop by rounded teaspoonfuls on a cookie sheet and bake at 375° F for 8 minutes. Transfer to wire rack to cool.
- Make chocolate sauce: mix all ingredients together thoroughly.
- Place a piece of waxed or parchment paper on a cookie sheet.
- Once cookies have cooled, pour chocolate sauce onto a small shallow plate. Push the cookie down into the chocolate so the bottom is covered. Remove it from the chocolate and place it on a piece of waxed or parchment paper. Once all your cookies are dipped you can place the cookies in the fridge to solidify the chocolate more quickly.
- Remove from waxed or parchment paper, and enjoy!
