Even if you, like me, are not a chicken-lover, you’ll enjoy this easy hot chicken salad. It also happens to be low-carb too!
Every other month, we get a meat delivery from a local farmer who raises grass-fed and pastured animals. Unpacking those boxes and discovering what yummy meats will be filling my freezer each month is so much fun. Every month 6 whole chickens are contained in my boxes.
I have quite a time with chicken. You see, I don’t love chicken (at least not the way I do beef and pork). My family would be happy if I just roasted the chicken…but I would just sit there and pick at it.
I have to do something more with the chicken. It has to end up in a casserole, soup, or something with other ingredients that really give it more flavor.
Enter this Easy Hot Chicken Salad recipe.
Not only is this hot chicken salad delicious, but it’s easy. Do you have some chicken breasts or thighs sitting around? Maybe a whole chicken? Just cook your chicken in the oven, chop up the meat, toss with the other ingredients. Voila! You’re ready to bake and eat.
Time Crunch Shortcut
Are you in a time crunch? Want to make this hot chicken salad even easier? Grab a rotisserie chicken from the store and you don’t even have to worry about cooking the chicken. Dinner doesn’t get much easier than that!
Easy Hot Chicken Salad (low-carb)
Ingredients
- 2 cups chicken cooked and cubed
- 2 cups celery thinly sliced
- 1/2 cup almonds sliced, toasted
- 1/2 teaspoon salt
- 2 Tablespoons dried minced onion
- 1 cup mayonnaise
- 8 oz sliced water chestnuts 1 can
- 1 cup sharp cheddar cheese shredded
Instructions
- Preheat oven to 450 degrees.
- Mix everything except the cheese in a bowl.
- Pour the mixture into a casserole dish.
- Bake for 20-25 minutes to warm through. Add the cheese to the top of the mixture during the last 5 minutes.
- Serve and enjoy!

Make Ahead!
This easy hot chicken salad recipe always wows company. I have often thrown it together ahead of time and put it in the refrigerator and pull it out and warm it up in the oven right before we’re ready to eat. Try it out if you’re looking for an easy dinner with company.
If you have a ladies’ brunch or shower, you can put this hot chicken salad in individual ramekins for a fancy little touch—but not necessary if you’re feeding a herd of boys like I am.
