Each thumbprint is individual, a unique marker for every person. No two thumbprints are the same. Just like these apricot almond thumbprint cookies, no two are the same and each are perfectly individual. These pretty little gems are a yummy treat any time of year, but we love them at Christmastime!
When I bake during the Christmas season, I make cookies and baked goods that are reflections of my family heritage. I also enjoy making ones that have unique qualities and show how much love I’ve poured into these delicious treats. Apricot almond cookies are my favorite to bake during the holiday season because they are delicious bite sized cookies that bear my thumbprint. Each cookie is an individual—a perfect little ball of dough.
I can remember when I was a child growing up, baking these cookies with my Mother and Grandmother during the Christmas season. They would roll the dough balls and I would get to press each one with my thumbprint, readying them for the delicious jam center. As I continue this tradition with my own family, I can’t help but think back to the special times my Mother, Grandmother, and I had in the kitchen so many years ago. Those are memories I treasure. I feel so blessed to be able to carry on this tradition with my own children. This is a sweet holiday treat that I happily allow my children to enjoy because they are bite sized and free of processed sugar.

Day 14: Apricot Almond Thumbprint Cookies
If your family really doesn’t like apricots, you could use your favorite flavor of jam instead. But we encourage you to give these a try as written– we think you’ll love them as much as we do!
15 Days of Grain-Free Christmas Cookies: Apricot Almond Thumbprint Cookies
Ingredients
- 2 cups almond flour
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 3 tablespoons coconut oil melted
- 2 tablespoons honey
- 1/4 cup apricot preserves no sugar added
Instructions
- Preheat oven to 350° F.
- In a food processor combine flour, salt and baking soda.
- Add coconut oil and honey until a firm dough forms.
- Roll 1 tablespoon of dough in hands to form ball. Place formed dough on parchment lined baking sheet.
- Press thumb into the center of each dough ball to make an indentation.
- Add 1/2 tsp of apricot jam to the center of each dough ball.
- Bake 8-10 minutes or until cookies are golden brown.
- Let cool on cookie sheets to prevent crumbling.
- Enjoy!
